A natural yeast derivation nutrient for
use in white and rose' wines, Opti-White is rich in polysaccharides
and has high anti-oxidative peptides. These key peptides work with
SO2 potentially allowing the winemaker to reduce SO2
dosage. Opti-White enhances smoothness, increase roundness, helps
avoid browning from oxidation and protects fresh aromas during aging.
Opti-White is typically added to the
juice at the onset of fermentation. Dissolve Opti-White in four
times its weight in water and add at the beginning of fermentation.
