Festive Recipes using Malt Extract for the Holidays
Malt Extract Bread (makes one small loaf)
2/3 cup hot water
3 tablespoons amber malt extract
2 teaspoons bread yeast
2.5-3 cups bread flour
2 tablespoons melted butter
1/2 teaspoon salt
1. Mix the hot water with the malt extract. When the malt extract is dissolved, add yeast and mix thoroughly.
2. Mix 1.5 cup bread flour with melted butter. Add the water-malt extract-yeast mixture and set aside in a warm place to rise.
3. In about 30 minutes when the dough has double in size, punch the dough down then add 1/2 teaspoon salt and 1 cup flour. Mix these ingredients, adding more flour until the dough is no longer sticky. Knead for 5 minutes, form into a loaf, and place in a greased loaf pan. Set aside in a warm place to rise.
4. When nearly doubled in size, bake 40 minutes at 400 degrees F.
Caramel Malt Bread (makes 2 small or 1 large loaf)
1 cup uncrushed Crystal Malt (40-80L)
1 cup hot water
3 tablespoons light or amber malt extract
1 tablespoon bread yeast
2.5-3 cups bread flour
3 tablespoons melted butter
1 teaspoon salt
1. Cover crystal malt with cold water and allow to stand for 15 minutes. Put soaked malt in food processor and process for 1 minute.
2. Mix the hot water with the malt extract. When the malt extract is dissolved, add yeast and mix thoroughly.
3. Mix 1.5 cups of the bread flour with processes Crystal Malt, melted butter and water-malt extract-yeast mixture and set aside in a warm place to rise.
4. In about 30 minutes when the dough has double in size, punch the dough down then add 1 teaspoon salt and 1 cup flour. Mix these ingredients, adding more flour until the dough is no longer sticky. Knead for 5 minutes, form into loaves, and place in greased loaf pans. Set aside in a warm place to rise.
5. When nearly doubled in size, bake 50 minutes at 375 degrees F.
Malt Waffles
Add a tablespoon of malt extract to 3 cups of waffle batter. Cooking time remains the same, and the resulting waffles will be a tad darker and slightly crisper than normal.
For a really malty treat, add a tablespoon of malt extract to cup of maple syrup, mix thoroughly. Slather atop the waffles and enjoy.
