Hop Asparagus and Spears

Planted hops a year or two ago and are wondering what to do with all the spring cuttings? Tender hop spears can be harvested. They are generally pickled and can be used in a variety of ways including: Hor d' oeuvres garnish, eaten with cheeses or salmon, garnish for Martini or Bloody Mary. Brine makes a great marinade.

In addition to pickled hop shoots, try white hop asparagus. Cut shoots only in early spring. The season usually only lasts for 3-4 weeks around late March and early April. Try this delicate fresh vegetable.
